I am right there with you garth. I hate to cover a good steak with too much marinade but I will usually marinate in some italian dressing for about an hour and then add some crakced black pepper before I grill them. Four/Five minutes each side alternating grill lines half way through each side.

That is exactly how I do it, Shoe, except I usually marinate mine for 2-3 hours. Grill temperatures obviously vary. I got a nice new gas grill for Christmas. When I close the lid on it, it gets up to about 650-700 degrees inside. I used to be a charcoal purist, but I converted many years ago.

Ive done this before with chicken breasts never with steak. Im gonna give it a whirl just put a couple of ribeyes in some dressing, going to go to school come home have a couple beers and give it a shot.
quick question guys do you ever put little cuts or slices on whatever your marinating before you throw it in the marinate. Ive heard people say to do this and the marinate will get to the inside and soak up, but i also heard not do this because when you are grilling all the juices will come out the cuts.

I don't ever put any cuts in a steak until I'm ready to eat it. I don't even use a fork on it while grilling.
Don't charcoals grills take a long time though? Was thinking of getting a propane, but wasn't sure about the taste vs. a charcoal grill.
I bought a Webber grill 3 yers ago. It is a charcoal grill with a propane light. (No lighter fluid taste) It has 2 baskets to put the charcoal in. Load the 2 baskets with charcoal, turn on the propane for 5 minutes. Come back in 15 minutes to a ready grill. Using these baskets are very nice because it uses about half the charcoal as normal and you can move the baskets around to create indirect grilling. It is awesome and only runs about $300.

My brother uses this big propane torch to light his charcoal. It's attached to a hose that's attached to a propane tank and he torches the charcoal to get it started. It's pretty fun to watch, but I think he just does it to feed his pyromania. A $300 Weber propane/charcoal grill sounds like a much more practical solution.
