I've done it and not steamed them at all. That is the way this gourmet chef prepared it.....It comes out great just baked. If you haven't tried it, don't knock it....After I bake it for around 15 minutes, I throw it on the BBQ for a few minutes to get a charbroiled taste. Shit man, i was a cook in 2 high end places up here for 3 years when i was younger. There wasn't a lobster we sent out that wasn't pre-cooked 1st. Baked Stuffed lobsters were always pre steamed. We had 2 for a couple reasons. First you need 3 hands to hold down a live lobster while cutting it. The thing and tail go crazy if you don't. Even after cutting it the thing still bounces on nerves and you would look foolish trying to stuff a live lobster while the tail and claws were flapping. GL keeping the stuffing in place. The other reason is the obvious. You can eat a live lobster 15 minutes after being in the oven, but i'm not. That's why we pre steamed them, because they would never cook through in 10-15 minutes if you didn't. You drop them in a pot of hot water to heat up the lobster, than you cut it open and the 10-15 minutes in the oven is more or less to cook up the stuffing and finish the lobster off. The 3rd thing is a dead lobster. Anybody up here will tell you a dead lobster is a bad lobster. They can make you sick if you cook up lobsters that have been dead for more than a short period. If you ever buy lobster and you get home and the thing is not moving/limp, take it back or cook it right away. This all leads back to taking a live kicking and screaming lobster and trying to stuff it alive in the tail that is constantly moving. Most of those links you gave didn't say to boil or steam the lobster 1st but i think that goes without saying. Most people know that already. I've worked with and cooked alot of lobster and i can't imagine taking a live one and stuffing it then throwing it in the oven. No offense but that's crazy and good luck with that thing being fully cooked in anything short of 40 minutes. You always pre cook or steam lobsters before making most lobster dishes. Kaz, Once again you post a link to something that i already mentioned which is baked stuffed lobster tails. Notice where it says to thaw them out? They are cooked already Kaz. I lived around them all my life and what you keep trying to get me to understand has been mentioned by myself already 5 pages ago. Trust me, i know how to cook lobster and every recipe you have shown still includes COOKING the lobster before it hits the oven.

Just came home from the doctor and he thinks it might be cartilage damage in between the toe joints now. It still hurt like a bastard. He had my feet formed for a special shoe and i'm out until they come in (2 more weeks). After that, i see if they help. If not, the knife will have to be used!

kelly and i are considering going to maine over the summer prolly late june or early july. was wondering if possible you could tell me some places i should visit. will prolly stay @ a b&b or a nice hotel along the coast. prolly a 2 or 3 day visit. just curious if you had an suggestions as we've never been before
