Lobster tails....No doubt! They are frozen and brown. When you defrost them and put them in the oven for 20 minutes, they come out red and are cooked all the way through.....That's all I've been trying to say all along. I already agreed with you that live lobsters probably need to be boiled alive. these are frozen tails.....

Correct. Alot of tails are shipped that way. All the pre-packed bags of meat up here that you can buy by the pound are 99% knuckle, claw and body meat, never tails. It's because they ship them out that way.
My point was ... If you are doing it at home with a live lobster, every one i know just presteams or boils it and then they let the tail cool a little, add the stuffinf and finish it in the oven. I worked at a bunch of great seafood rest. when younger and the better rest. i worked at DIDN'T use frozen tails. Nothing beats FRESH and we would steam about 100-200 lobsters every morning. We would clean 50 or so to get about 25 orders of "Twin Lobster Tails" together and we would use the other meat for lobster rolls on the lunch menu. At that point we cut them open, add the stuffing and cover them. When one gets ordered, boom, out of the fridge and in the oven for 15 minutes. Even when people ordered boiled lobsters they were rarely cooked live. We simply take the cooked lobsters and drop them in a hot water tank for 5 minutes and boom. You don't have time to work with them live but sometimes when your busy and you run out, you have to. You won't take a live lobster home and throw it in the oven ever when it's alive. Dead and frozen tails, yes.

OK....I think we've finally reached an agreement point. All I was saying all along is that those recipes were for frozen lobsters, uncooked, baked for 20 minutes. You said, they were always precooked. But they are not. I completely agree with you about live lobsters. These are a different animal.....So we are done now? I am.....Thanks for the debate. Shit, I am really craving a lobster right now.....Dammit!
