The move will commence at 9:00pm EST (or very shortly thereafter), so that should be your goal in terms of DNS changes. You may even want to push the NS change up an hour or two from that (depending on how long the registrar, etc. takes to make said changes, something that varries from registrar to registrar, and I dont know offhand).
Not sure how long we will be down, but hopefully not more than 3-4 hours.
