1 large eggplant, peeded and sliced
1 egg, beaten
1 cup Italian breadcrumbs
Vegetable oil for frying
16 oz. spaghetti sauce homemade not in a jar LOL
1 8 oz. pkg. shredded mozzarella cheese
1 8 oz. pkg. shredded cheddar cheese
1 cup grated parmesan cheese
Dip eggplant slices in egg. Coat with breadcrumbs. Cook in oil in skillet until brown on both sides. In 9x13 baking dish, alternate layers of spaghetti sauce, eggplant, mozzarella, and cheddar until all ingredients are used. Top with parmesan. Bake at 30 until bubbly.
